1. In a bowl, mix the cream cheese, 1/2 to 3/4 of the packet of ranch dressing mix (add the rest to taste), and black pepper with a wooden spoon until totally combined. Divide equally among the tortillas and spread into a single layer all over the surface of each tortilla.
2. Sprinkle on the red and green bell pepper, as well as the green onion. Roll them up nice and tight, then wrap them individually in plastic wrap. Store in the fridge for at least 1 hour or up to 8 hours.
3.Before serving, slice into 1/2 to 3/4 inch slices and serve on a platter.

Whipped Cream:
1. Heat oven to 325°F. Spray bottom and sides of 8- or 9-inch square pan with cooking spray.
2. In 1-quart saucepan, melt 1/4 cup butter over medium heat, stirring occasionally. Stir in brown sugar. Heat to boiling; remove from heat. Stir in 1/2 teaspoon cinnamon. Pour into pan; spread evenly. Arrange apple wedges over brown sugar mixture, overlapping tightly and making 2 layers if necessary.
3. In medium bowl, mix flour, baking powder, 1/2 teaspoon cinnamon and the salt; set aside. In large bowl, beat 1 cup granulated sugar and 1/2 cup butter with electric mixer on medium speed, scraping bowl occasionally, until fluffy. Beat in eggs, one at a time, until smooth. Add vanilla. Gradually beat in flour mixture alternately with milk, beating after each addition until smooth. Spread batter over apple wedges in brown sugar mixture.
4. Bake 55 to 65 minutes or until toothpick inserted in center comes out clean. Cool on cooling rack 15 minutes. Meanwhile, in medium bowl, beat whipping cream on high speed until it begins to thicken. Gradually add 2 tablespoons granulated sugar, beating until soft peaks form.
5. Run knife around sides of pan to loosen cake. Place heatproof serving plate upside down over pan; turn plate and pan over. Remove pan. Serve warm cake with whipped cream. Store cake loosely covered.

Microfiber cloths are an eco and budget friendly alternative to paper towels for cleaning.
Makes 4 servings
1. Preheat oven to 375°. Place sweet potatoes on a large baking sheet. Toss with oil and season with salt and pepper.
2. Bake until tender, about 1 hour, depending on size. Let cool slightly, then, using a paring knife, slice along top of each sweet potato and push in both ends to create a well.
3. In a medium bowl, toss chicken with barbecue sauce and garlic. Stuff into sweet potatoes, then top with red onion, jalapeño, and Gouda. Return to oven and bake until cheese is melty and chicken is warmed through, about 15 minutes more.
4. Drizzle with barbecue sauce before serving.

1. Heat grill on high and heat oven to 400°F. Grill 4 ears corn until charred on all sides, about 5 minutes total. Transfer to cutting board. Reduce grill to medium.
2. Cut charred kernels off cobs and set aside (about 2 cups). Cut kernels off remaining 4 ears corn (about 21/2 cups). Heat oil in medium saucepan on medium. Add onion, raw kernels, and 1/2 teaspoon salt and cook, stirring occasionally, until tender, about 5 minutes.
3. Add cream, bring to a boil, then lower heat and simmer until cream is reduced by one-third and mixture has thickened, about 15 minutes. Using immersion blender, puree corn mixture until mostly smooth. With blender running, add egg and yolk; blend to combine.
4. Fold in charred corn and tarragon, then transfer to shallow 2-quart or 9-inch-square baking dish. Bake until pudding is set and top is beginning to brown, 15 to 20 minutes. Sprinkle with tarragon leaves.
5. Meanwhile, season chicken with 1⁄2 teaspoon each salt and pepper and grill, covered, turning occasionally, 18 minutes. Uncover and continue grilling, basting with barbecue sauce, until chicken is cooked through, 5 to 7 minutes more.

Makes 18-22 meatballs
Meatballs
Hawaiian bbq sauce:
1. Position 2 racks near the center of the oven and preheat the oven to 475ºF. Line 2 baking sheets with parchment paper, set aside.
2. In a saucepan, combine the ingredients of the Hawaiian BBQ sauce over medium high heat, allow to come to a boil, reduce the heat so it simmers. Let simmer for 8-10 minutes. Remove from heat and allow the sauce to cool. The sauce will thicken as it cools so don't worry if it looks thin.
3. In a large bowl, combine the ground chicken, garlic, salt pepper, eggs, panko, paprika, and onion powder. Use your hands to mix all the ingredients together. It's easier to tell when the ingredients are combined when using hands. DO NOT OVERMIX, it will result in drier meatballs.
4. Shape the meat mixture into ball, about 3 tablespoons of meat per ball. You can also do this with an ice cream scoop. Place shaped meatballs on prepared baking sheet. bake for 11-13 minutes or until the meatballs are completely cooked.
5. Using 2 tablespoons, dip each individual meatball into the sauce. Alternately, you can brush each meatball with the sauce. Place back on the baking sheet and bake for an additional 1-2 minutes. Drizzle or brush with additional sauce as desired.

Maddie says summer is on the way! Make sure your floors are looking great under all that sunshine:
Yarn Type Finish and Nylon mops are used for applying floor finish. Cotton and Blend mops are used for general-purpose mopping.
Tailband Type Tailbands prevent tangling and improve floor coverage for more efficient mopping. Woven Tailband allows for commercial laundering, while a mop without a tailband requires handwashing or is disposable.
End Type Looped End mops reduce fraying and unraveling and are launderable, extending the life of the mop. Cut End mops are more economical but are also disposable.
Makes 12 servings
In a pitcher, combine 3-1/2 cups unsweetened pineapple juice, 1-1/2 cups orange juice, 1 cup coconut water, 1 cup orange-peach-mango juice, 1 cup coconut rum, 1 cup dark rum, 1/4 cup key lime juice (regular limes are OK, too) and 3 tablespoons of grenadine.
Stir and chill for about an hour. Serve over ice!

Green Goddess Dressing
1. Finely dice or chop up all of the vegetables and toss in a large bowl.
2. In a blender or food processor, add the dressing ingredients, liquids first: lemon juice, olive oil, rice vinegar, shallot, basil leaves, spinach, nutritional yeast, walnuts, and salt. Blend until smooth.
3. Add the dressing to the bowl with the diced vegetables and mix well. Enjoy on its own, on tacos, as a side with protein, or scooped up with tortilla chips!

1. Line a 9-in. square pan with foil; grease foil with 1-1/2 teaspoons butter.
2. In a large microwave-safe bowl, melt chocolate chips and remaining butter, stirring after 1 minute and every 30 seconds thereafter. Stir in milk and vanilla. Spread into prepared pan. Refrigerate until firm.
3. Using foil, lift fudge out of pan. Remove foil; cut fudge into 1-in. squares. Store in an airtight container in the refrigerator.

Makes 4 servings
1. Place the cold heavy cream in the bowl of a stand mixer fitted with the whisk attachment. Beat on medium speed on 1-2 minutes, or until soft peaks form. Remove the whipped cream to a bowl.
2. Add the cream cheese and vanilla extract to the mixer bowl (no need to clean it). Mix to combine.
3. With the mixer on low speed, slowly add the sifted powdered sugar and cocoa powder.
4. Once all of the dry ingredients have been incorporated, turn the mixer to medium high speed and beat until the mixture becomes light - about 2 minutes.
5. Add half of the whipped cream to the mixture and fold it in gently - this should be a bit of an arm workout. Once the first batch of whipped cream is fully incorporated, add the remaining whipped cream and fold it into the mousse as well.
6. Warm the hot fudge sauce according to the package directions just until it is pourable - you don't want it to be too hot or it will melt your mousse.
7. dd a few tablespoons of hot fudge to the bottom of your serving dishes and top with mousse. Garnish with your desired toppings.
8. Store any leftovers in a refrigerated airtight container for up to two days.

1. Preheat the oven to 400 degrees F
2. Line a baking tray with parchment or a non-stick silicone mat.
3. Slice the carrots into long thin pieces – about the size of a French fry (no need to peel).
4. Mix the egg and water and place in a shallow dish. Place the Parmesan into another shallow dish
5. Dip the carrot sticks first in the egg wash, allow any excess to drip off, then roll in the parmesan and place on the baking tray. Repeat until you’ve used all the carrots.
6. Sprinkle with the salt and pepper, and place in the oven for 15-20 minutes, turning once until dark golden brown.
7. While the carrots are cooking, mix together the mayonnaise and chilli sauce in a small bowl.
8. Take the fries out of the oven, place on a plate and sprinkle with parsley. Serve with the chilli mayo dip.
