Sticky Garlic Butter Salmon

4 salmon filets

kosher salt and pepper

4 tablespoons unsalted butter

4 garlic cloves, minced

⅓ cup maple syrup or honey

2 tablespoons your favorite BBQ sauce

¼ cup water

chopped fresh parsley, for serving

lemon wedges, for serving

rice, for serving

1. Preheat the oven to 425 degrees F.
2. Season the salmon filets all over with salt and pepper.
3. Heat a cast iron skillet over medium heat. Add the butter. Once melted, stir in the garlic and cook for 30 seconds.
4. Stir in the maple syrup, BBQ sauce and water. Bring the mixture to a boil then reduce it to a simmer. Add the salmon into the skillet. Spoon the glaze over top of the salmon every 30 seconds or so. Cook and spoon it over for about 5 minutes.
5. Transfer the entire skillet, uncovered, to the 425 degrees F oven. Roast for 5 to 8 minutes, until the salmon is just cooked through, is opaque and pink and flakes easily with a fork.
6. Sprinkle the salmon with chopped fresh parsley and serve with lemon wedges. Serve with white or brown rice!

'Portillos' Chopped Salad

Enjoy Portillo's chopped salad? Try this one! Makes about 10 servings.

1 cup uncooked Ditalini pasta (2 cups cooked)

1 pound of bacon (about 1 cup cooked and crumbled)

3 cups chopped romaine lettuce

2 cups chopped iceburg lettuce

2 cups chopped red cabbage

1 cup grape tomatoes, quartered

1 cup sliced green onions

4 ounces crumbled gorgonzola cheese (about 1 cup)

(optional) 2 cups cooked and diced chicken

Sweet Italian Dressing:

1/2 cup olive oil

1/4 cup white balsamic vinegar

2 cloves garlic, peeled and minced

1 teaspoon Dijon mustard

1 teaspoon sugar

1/2 teaspoon dried oregano

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper

1. Cook Ditalini pasta according to package instructions. Make sure you salt the pasta water while cooking to give it some flavor. Drain and cool. Set aside.
2. Cook bacon in a skillet until done. Let bacon cool, then crumble it.
3. Combine romaine, iceberg, red cabbage, tomatoes and green onions in large salad bowl.
4. Add cooled pasta, bacon and gorgonzola cheese to salad. Add chicken if desired.
5. Add dressing to taste right before serving so that it doesn't get soggy.
6. For the Dressing: Whisk together olive oil, vinegar, garlic, Dijon mustard, sugar, oregano, salt and pepper.

Easy Churro Cheesecake Bars

½ cup granulated sugar

2 tablespoon ground cinnamon

2-8 oz cream cheese packages softened

½ cup granulated sugar

1 egg

1 teaspoon vanilla extract

2 -8oz cans Pillsbury crescent dinner rolls

Spray a 9x13" pan with non-stick spray and evenly sprinkle half of the cinnamon sugar mixture on there.

1. Preheat the oven to 350F.
2. In a medium bowl combine 1/2 cup granulated sugar and 2 tablespoon cinnamon and set aside.
3. In a large bowl, cream the softened cream cheese. Add in the egg, the other 1/2 cup granulated sugar, vanilla extract, and a pinch of salt. Set aside. 4. Spray a 9x13" pan with non-stick spray and evenly sprinkle half of the cinnamon sugar mixture on there.
5. Unroll the first can of crescent dough onto your lightly floured surface and pinch the seams together to seal. Carefully place it on the cinnamon sugar and press onto the pan to cover the bottom.
6. Evenly spread the cream cheese mixture on top of the first layer of crescent dough. Unroll the second can of dough, repeat the process of sealing the seams then cover the cheesecake filling with it.
7. Top with the remaining cinnamon sugar and bake in the preheated oven for 30 minutes or until light brown.
8. Allow the bars to cool down before chilling in the fridge for an hour. Slice and enjoy!

Easy Tortellini Salad

18 ounces refrigerated cheese tortelloni

2 ½ ounces (2 cups) baby spinach or chopped spinach

1 handful fresh basil leaves, roughly chopped (recommended: add another 1 handful chopped fresh dill)

14 ounce can (8.5 ounce dry weight) quartered artichokes, roughly chopped

1 pint cherry tomatoes, sliced in half

¼ cup white wine vinegar***

1 tablespoon granulated sugar

½ teaspoon each dried dill and garlic powder

1 teaspoon kosher salt, plus more to taste

Fresh ground black pepper

¼ cup olive oil

¼ cup neutral oil (like organic vegetable or grapeseed**)

¾ cup shredded Parmesan cheese

1. Start a large pot of well-salted water to boil. Boil the pasta until al dente according to the package instructions (usually around 2 minutes). Drain the pasta and run cool water over it until it’s warm.
2. Meanwhile while the pasta cooks, chop the spinach, basil and artichoke hearts, and slice the tomatoes. In a large bowl, whisk together the vinegar, sugar, dried dill, garlic powder, kosher salt, and fresh ground black pepper. Then whisk in the olive oil and neutral oil.
3. Once the pasta is done, add it to the large bowl of dressing and toss with the chopped vegetables. Add the Parmesan cheese and stir to combine. Taste and add salt or more cheese to taste. Serve at room temperature or cold. Stores up to 4 days refrigerated (leftovers taste great and work well for lunches!).

*Tortelloni is large tortellini that you can find in the refrigerated section. It’s best for this salad because standard tortellini is too small.
**Using neutral oil in this pasta salad helps leftovers keep in the fridge: if you use only olive oil, it clumps up after about 1 day of storage. If you’re not planning to have leftovers, you can use 100% olive oil if you prefer.
***In a rush? Substitute ¾ cup Italian dressing or your purchased vinaigrette dressing of choice for the homemade dressing.

Pork & Mango Stir-Fry

1 pork tenderloin (1 pound)

1 tablespoon plus 2 teaspoons canola oil, divided

1/4 teaspoon salt

1/2 teaspoon crushed red pepper flakes, optional

6 ounces uncooked multigrain angel hair pasta

1 package (8 ounces) fresh sugar snap peas

1 medium sweet red pepper, cut into thin strips

1/3 cup reduced-sugar orange marmalade

1/4 cup reduced-sodium teriyaki sauce

1 tablespoon packed brown sugar

2 garlic cloves, minced

1 cup chopped peeled mango

1/4 cup lightly salted cashews, coarsely chopped

1. Cut tenderloin lengthwise in half; cut each half crosswise into thin slices. Toss pork with 1 tablespoon oil, salt and, if desired, pepper flakes. Cook pasta according to package directions.
2. Place a large nonstick skillet over medium-high heat. Add half the pork; stir-fry 2-3 minutes or just until browned. Remove from pan; repeat with remaining pork.
3. Stir-fry snap peas and red pepper in remaining oil 2-3 minutes or just until crisp-tender. Stir in marmalade, teriyaki sauce, brown sugar and garlic; cook 1-2 minutes longer. Return pork to pan. Add mango and cashews; heat through, stirring to combine. Serve with pasta.

April Fool's Meatloaf Cupcakes with Mashed Potato Frosting

A fun way to celebrate the holiday!

1. Preheat oven to 350 degrees. Lightly grease a muffin tin.
2. Make your meatloaf mixture. You can use any recipe or check out my favorite recipe HERE
3. Make everything except the glaze.
4. Form meatloaf into large meatballs that fill the muffin tin holes. Bake in the preheated oven for 35 to 40 minutes.
5. Make a batch of mashed potatoes.
6. Once the meatloaf is baked, remove from muffin tin and place in cupcake liners.
7. Transfer mashed potatoes to a pastry bag with a star tip. Frost "cupcakes".

Fluffy Key Lime Pie

Serves 8

1/4 cup boiling water

1 pkg (0.3) sugar-free lime gelatin

2 cartons (6 ounces each) Key Lime yogurt

1 carton (8 ounces) frozen fat-free whipped topping, thawed

1 reduced fat graham cracker crust (6 ounces)

1. In a large bowl, add boiling water to gelatin; stir 2 minutes to completely dissolve. Whisk in yogurt. Fold in whipped topping. Pour into crust.
2. Refrigerate, covered, until set, about 2 hours.

Recessed Dispenser Re-Do

If you have recessed folded towel dispensers and think roll towel dispenser installation is impossible...think again!

The amount of waste with folded towels is incredible! Their dispensers just make it easy to grab fist-fulls of towels- used or not. The towels that are not used are left to clutter the bathroom counter or dumped in the garbage.

Controlled use roll towel dispensers are more economical. They only dispense a certain length at a time. Towels are not easily pulled out or fall out on the floor like folded towels. LESS WASTE!

Roll towel dispensers also hold more towels, so there is less labor spent refilling dispensers.

My friend had to leave his job at the gym because he wasn't strong enough. He just handed in his too weak notice.

Easy Crème Brûlée

8 shallow 4-ounce ramekins

5 large egg yolks

3/4 cup (150g) granulated sugar, divided

3 cups (720ml) heavy cream or heavy whipping cream

1/2 teaspoon espresso powder (optional but recommended)

1/4 teaspoon salt

1 and 1/2 teaspoons pure vanilla extract

1. Preheat oven to 325°F (163°C).
2. Whisk the egg yolks and 1/2 cup (100g) of granulated sugar together. Set aside. (At this point or before you temper the egg yolks in the next step, bring a small kettle or pot of water to a boil. You’ll need hot water to pour into the baking sheet for the water bath.)
3. Heat the heavy cream, espresso powder, and salt together in a medium saucepan over medium heat. As soon as it begins to simmer, remove from heat. Stir in the vanilla extract. Remove about 1/2 cup of warm heavy cream and, in a slow and steady stream, whisk into the egg yolks. Keep those egg yolks moving so they don’t scramble. In a slow and steady stream, pour and whisk the egg yolk mixture into the warm heavy cream.
4. Place ramekins in a large baking pan. If you don’t have 1 pan large enough, bake them in a couple pans. Divide custard between each ramekin, filling to the top. Carefully fill the pan with about a 1/2 inch of the hot water. The baking pan will be hot so use an oven mitt to carefully transfer the pan to the oven.
5. Bake until the edges are set and centers are a little jiggly. The time depends on the depth of your ramekins. My ramekins are 1-inch and the custard takes 35 minutes. Begin checking them at 30 minutes. For a more accurate sign, they’re done when an instant read thermometer registers 170°F (77°C).
6. Remove pan from the oven and, using an oven mitt, remove the ramekins from the pan. Place on a wire rack to cool for at least 1 hour. Place in the refrigerator, loosely covered, and chill for at least 4 hours and up to 2 days before topping.
7. Using the remaining granulated sugar, sprinkle a thin layer all over the surface of the chilled custards. Caramelize the sugar with a kitchen torch and serve immediately or store in the refrigerator for up to 1 hour before serving. (Caramelized topping is best enjoyed right away.)

After 9-year-old Brian lost another baby tooth, he started thinking about the Tooth Fairy. Was she real, he thought? Finally realizing the truth, he worked up the courage to ask his mother, "Mother, are you the Tooth Fairy?"
"Yes, I am." Replied his mother, convinced he should hear the truth.
Brian seemed to take the news well enough, but then looked at her with some confusion. "Wait- How do you get into the other children's homes?!"

Beef Noodle Soup

1 pound ground beef

1/2 cup chopped onion

2 cans (14-1/2 ounces each) Italian stewed tomatoes

2 cans (10-1/2 ounces each) beef broth

2 cups frozen mixed vegetables or 1 can (15 ounces) mixed vegetables

1 teaspoon salt

1/4 teaspoon pepper

1 cup uncooked medium egg noodles

In a Dutch oven, cook beef and onion over medium heat until meat is no longer pink, 5-7 minutes, crumbling beef; drain. Add the tomatoes, broth, vegetables and seasonings. Bring to a boil; add noodles. Reduce heat to medium-low; cover and cook until noodles are tender, 10-15 minutes.
